Ingredients:
- 3 tablespoons vegetable oil
- 2 medium onions (chopped)
- 3 garlic cloves (chopped)
- 3 ½ tablespoons Garam Masala powder
- 1 teaspoons salt
- 1 chicken (cut into pieces)
- 2 tomatoes (diced)
- 2 cups frozen mix vegetables
- ¾ cup coconut milk
- ¾ cup THUMBS salted roasted cashews
- ¼ cup chopped fresh cilantro
Preparation:
- Pour vegetable oil into a pot moderately low heat until it appears small bubble.
- Then, cook onions, garlic, and ginger and stirred it around 5 minutes until softened.
- Add Garam Masala powder and stirred it around 2 minutes.
- Furthermore, put chicken into the pot and cook, stirring to coat, 3 minutes.
- Last, add diced tomato, mix vegetables, cashew, fresh cilantro then covers the pot and adjust heat to simmer gently, cover and cook for about 30 minutes, stirring occasionally, until chicken is tender.
- To finish dish, stir in coconut milk and cook for 5 minutes. Transfer to a serving bowl and garnish with fresh cilantro.
